Acai Smoothie

Acai berries are small, dark purple fruits native to the rainforests of South America. While you won’t find them fresh here in North America, you can buy them frozen or in powder form. In this acai smoothie, I use the acai powder because it is readily available and tastes and looks great in smoothies.

Equipment

  • 1 blender

Ingredients
  

  • 1 cup vanilla almond milk - I use the sweetened kind
  • 1 ½ tablespoons acai powder
  • 1 cup strawberries - sliced and frozen
  • ½ cup pineapple chunks - frozen

Instructions
 

  • Add all of the ingredients to a blender.
  • Pulse a few times and then blend on high speed until smooth.
  • Transfer to a glass and serve.

Notes

  • To cut down on prep and freezing time, I simply buy the fruit in bags from the freezer section of the supermarket.
  • It is recommended to refrigerate acai powder to keep it fresh.
