Beet Smoothie

This beet smoothie has a little bit of that earthy, sweet flavor that beets are known for. It’s combined with orange juice, vanilla yogurt, frozen bananas and strawberries to make the flavors really pop.

Ingredients
  

  • ¼ cup fresh orange juice
  • ½ cup vanilla Greek yogurt
  • ½ fresh beetroot - peeled and chopped - about ⅔ cup
  • ½ cup bananas - sliced and frozen
  • ½ cup strawberries - sliced and frozen

Instructions
 

  • Add all of the ingredients to a blender jar.
  • Blend on high speed until smooth. Adjust the thickness with the orange juice, if needed.
  • Transfer to a glass and serve.

Notes

  • There is no need to cook the beets before blending. I prefer raw beets in my smoothies but I do peel them first.
  • Freshly squeezed orange juice is best but if needed you can use prepared orange juice; I suggest o.j. without added sugars.
