This beet smoothie has a little bit of that earthy, sweet flavor that beets are known for. It’s combined with orange juice, vanilla yogurt, frozen bananas and strawberries to make the flavors really pop.
½fresh beetroot - peeled and chopped - about ⅔ cup
½cupbananas - sliced and frozen
½cupstrawberries - sliced and frozen
Instructions
Add all of the ingredients to a blender jar.
Blend on high speed until smooth. Adjust the thickness with the orange juice, if needed.
Transfer to a glass and serve.
Notes
There is no need to cook the beets before blending. I prefer raw beets in my smoothies but I do peel them first.
Freshly squeezed orange juice is best but if needed you can use prepared orange juice; I suggest o.j. without added sugars.
