This cucumber smoothie is a refreshing concoction that combines the crisp, coolness of cucumber with the sweet and tropical flavors of pineapple and the natural sweetness of apple juice. It’s vegan, low-calorie and uses only 3 ingredients.

Ingredients
  

  • ¼ cup apple juice
  • ¾ cup cucumber - chopped
  • ¾ cup frozen pineapple chunks
  • fresh mint - optional garnish

Instructions
 

  • Add the apple juice, cucumber and pineapple to a blender.
  • Blend on high speed until smooth.
  • Transfer to a glass, garnish with a mint sprig (if using) and serve!

Notes

  • Feel free to customize the recipe by adding ingredients like ginger or lime for an extra kick of flavor.
  • You can also make it creamy by adding a tablespoon or two of Greek yogurt.
  • Remove the cucumber peel before blending if that is your preference. Personally, I like to keep the skin on for the extra fiber and nutrients.
