This cucumber smoothie is a refreshing concoction that combines the crisp, coolness of cucumber with the sweet and tropical flavors of pineapple and the natural sweetness of apple juice. It’s vegan, low-calorie and uses only 3 ingredients.

The inner flesh of cucumber has a high water content, contributing to its hydrating and cooling qualities in this smoothie.

Ingredients

Cucumber smoothie ingredients prepped and labeled on wooden board.
  • apple juice – unsweetened is best
  • cucumber – fresh cucumber with the skin on
  • frozen pineapple chunks – you can find pre-frozen pineapple chunks in the grocery store or freeze your own
  • fresh mint – this is an optional garnish and provides an extra fresh quality to the smoothie

Variations

  • Feel free to customize the recipe by adding ingredients like ginger or lime for an extra kick of flavor.
  • You can also make it creamy by adding a tablespoon or two of Greek yogurt.
  • Remove the cucumber peel before blending if that is your preference. Personally, I like to keep the skin on for the extra fiber and nutrients.
