This cucumber smoothie is a refreshing concoction that combines the crisp, coolness of cucumber with the sweet and tropical flavors of pineapple and the natural sweetness of apple juice. It’s vegan, low-calorie, plus it's a 3 ingredient smoothie.

Ingredients

- apple juice - unsweetened is best
- cucumber - fresh cucumber with the skin on
- frozen pineapple chunks - you can find pre-frozen pineapple chunks in the grocery store or freeze your own
- fresh mint - this is an optional garnish and provides an extra fresh quality to the smoothie

Recipe Variations
- Feel free to customize the recipe by adding ingredients like ginger or lime for an extra kick of flavor.
- This recipe doesn't use yogurt as written, but you can make it creamy by adding a tablespoon or two of Greek yogurt (like I do in my yogurt smoothie) or adding a splash of milk.
How to Make a Cucumber Smoothie

Step 1. Add the apple juice, cucumber and pineapple to a blender.

Step 2. Blend on high speed until smooth.

Step 3. Transfer to a glass, garnish with a mint sprig (if using) and serve!

This smoothie is low in calories and fat. Cucumbers, with their high water content and electrolytes, can help with hydration. It is important for the body to be hydrated for a healthy intestine, which can prevent constipation and kidney stones.
Remove the cucumber peel before blending if that is your preference, especially if the skin is thick and/or bitter. Personally, I like to keep the skin on for the extra fiber and nutrients.
I like using English cucumbers because they are always available at the grocery store and they have a thin skin but you can experiment with different types.
